Lebe'
Lebe', like the thinner khubz but made in the coals of a fire, is the name of the flour, salt and water mixture that serves basically the same function as a tortilla. This sequence of shots shows the laying of the dough on the bed of coals, the covering with the coals and, ultimately, my buddy Feisal beating the ash off of the bread and scraping off any burned spots. Depending on the group size, the lebe' might be as small as a tortilla or as big as a large pizza. Top this with tuna and feta cheese and you've got a meal! I've never once chomped down on a grain of sand when eating Bedouin bread.
